feat: Add INK support

Explanation

We want to enable INK into price API

Note

Adds INK mainnet support across assets controllers and price service.

• Map 0xdef1 to eip155:57073/... in token-prices-service/codefi-v2.ts for native asset pricing
• Add Multicall3 address for 0xdef1 in multicall.ts and verify via new unit test in multicall.test.ts
• Update package changelogs to document new INK mappings
